Kale chips



I guess I'm really behind with the times. I was recently informed by my friend of the new raging snack in the foodie world: Kale chips.

Of course my one eyebrow is already raised even before she completed the sentence. I scurried off to google and sure enough all foodie blog sites report that it's the next best thing to potato chips. or even better. *gasp*.  It was all the rage in 2010 so much that I'm shocked it didn't make the cover page of the Time magazine or something.  I felt like I was the last person to have not even heard of such a thing.

Kale is this lovely looking leafy green that are a little tough to cook. They contain a ton of vitamins and are so good for you. They are not even deep fried. I know, I know, I was shocked too. I'll give you some time to get over it. But till now, I wasn't sold on the taste. I've had a little bit in some soups and stews but I've never joined its fan club.  Till now.

You guys (and girls)- You've GOT to try these chips.  Now that your heart rate is coming back to normal after being informed there is such a thing as healthy chips... be prepared for the second news of the day- There is barely a recipe to it, it's that simple. Within minutes you will be feasting on green chips.

Check it out. I've made a couple of variations of this so far, one with just s&p and olive oil and the other with some parmesan and garlic and both are so so good.



Ingredients:

-  1 bunch kale, washed and dried.
-  2 tsp olive oil
-  salt and pepper
-  (optional) 1 tbsp grated parmesan
-  (optional) 1 clove garlic thinly sliced

Directions: 

Cut off the woody tough stem and chop the rest of the leaves into bite size pieces

Toss with oil, salt, pepper and any other seasoning... be creative. You could even use onion powder, garlic salt, lemon pepper, taco seasoning!!!!

Preheat oven to 375F

Roast in a sheet pan for 12 minutes checking after 10 minutes. You want the edges to be a little brown but not burnt. And it only takes a minute for that line to be crossed. So check the oven!

They turn so crispy it's going to be hard to stop eating.

  5. Kale is a really really tough green.. Isn't swiss chard more "lettuce-y"? If so it might burn.. but no harm in giving it a try.
