You know Fall is here when...

.... it's time to roast veggies! Potatoes, squash, peppers, cauliflower.. you name it. It's one of my most favourite ways to eat veggies.  That's probably the only reason I look forward to cooler weather :-)

Yesterday I roasted butternut squash (400F for 30 minutes) with paprika, salt and pepper.  Eat with a fork!

I've also pureed it into a thick soup or serve the puree over pasta with a bit of parmesan.



  1. Mmmm, love roasted veggies! I've been known to roast them in the summer when I'm overwhelmed by veggies from the garden, but there is something so satisfying about eating them in the fall and winter!

  2. It's a good way to warm up the home!
